Pie high

Hold your horses.

Jourdanne is moving to the farm!

Yep, we all knew it was coming - in a classic case of city girl meets country boy, Jourdanne has been swept off her feet and is swapping lattes for silos out in the bush.

Gosh, I'll miss her. More to the point, I'll miss her food.


You see, Jourdanne is a fabulous cook. Not a michelin star fancy toffy type. But more your 'turn basic into brilliant'. She can take the most boring of ingredients from the pantry and turn them into something inspiring. I am continually impressed with her creativity - yet no fuss approach.

The big move is this weekend so I headed around to her place on Monday night for one final hoorah (and to watch the Farmer Wants a Wife finale of course!)

We started with non-alcoholic caprioskas in the balmy afternoon sun.


Then she just casually whipped up this delicious salad with 'leftovers' from the fridge. Sooooo good and soooo simple.

Lettuce/rocket, craisins, walnuts, feta with balsamic glaze and olive oil (she forgot the avocado but insists it makes it even tastier). I'd like to try some pistacchios in there.


Then her protein was so easy it was laughable. But so incredibly comforting and tasty. I didn't believe her when she sheepishly told me the recipe (and I'm almost embarrassed to share it with you it's so easy!).

1 can of cream of chicken soup mixed with half a cold roast chook, chopped. Pour half of chicken mixture onto one half of a sheet of puff pastry and fold the other half over the top. Press down the edges with a fork and brush with egg mix.

Repeat with the other half of the mixture.

Bake in the oven for about 20 minutes until golden and pastry cooked.

Told you it was easy.

It may not be on the menu for your next dinner party but it's one to keep in the memory bank when there's nothing in the pantry except for a can of soup. I think it's one of those that our Mothers have all tried, years ago. Would be great with a few additions aswell - mushrooms if you so desired (ergh, but I see the potential) and some bacon or some spinach. What about a thai spin with some curry paste? Or some kind of vegetable soup could work well with the roast chook.

Nothing beats a good pie!
